Keto Jalapeno Poppers

Ingredients

  • 6 fresh jalapeno peppers
  • 1/2 cup softened cream cheese
  • 1/2 cup shredded cheddar cheese (sharp or mild, your choice)
  • 1 oz. diced pimiento peppers (in a jar, usually on the pickle aisle)
  • 12 strips of thin-sliced bacon

Instructions

  1. Rinse jalepeno peppers, slice off the stem, slice in half length-wise, hollow out with a teaspoon, removing all membrane and seeds, set aside.
  2. Preheat oven to 400 degrees (f).
  3. In a mixing bowl, mix cream cheese and cheddar cheese.
  4. Fold in pimientos.
  5. Place jalepenos hollow-side up on cookie sheet and bake for 5 minutes.
  6. Remove from oven and carefully (they'll be warm) spoon in cheese mixture.
  7. Wrap each pepper with strip of bacon.
  8. Put back in the oven for 12-15 minutes.
  9. Change oven setting to broil for last 2 minutes, or until bacon starts to sizzle.
  10. Serve with your favorite keto-friendly blue cheese or ranch dipping sauce.
