How to Rice Cauliflower

Cauliflower is incredibly versatile. We use it on the keto diet for many substitute recipes like keto pizza crust,  keto rice, or keto hash browns. You will find that many keto recipes call for cauliflower to be used instead of potato or rice. You can find riced cauliflower in many stores already ready to go. I like to buy frozen riced cauliflower at Aldi, or Trader Joes. Walmart carries it now, and most regular stores do as well. If you want to make it yourself there are a couple of techniques.

You can either hand grate a head of cauliflower with a medium sized grater,  Or you can use a food processor with the grater blade to cut it into small, rice-sized pieces. With both techniques, you’re aiming for little pieces the size of rice, hence the term”riced cauliflower”.

When you use a food processor, makes sure to use small pieces of cauliflower at a time. If you stuff your food processor you won’t get a good result.

When you make riced cauliflower from scratch, be sure to press out the excess moisture by transferring the cauliflower rice to an absorbent towel or press with a few layers of paper towel into the bowl. This ensures no excess moisture remains, which can make your dish watery.
